Wen Shu’s Healing Congee Recipe

Choose a nice big pot so the rice has room to boil without overflowing.

Add 1/2 cup rice, then fill your pot with water until half full.

Peel and dice a fist sized piece of ginger, then add to the pot.

Bring to a boil, then reduce to a simmer.

The congee is ready once the rice is fully cooked and the soup has thickened.

Season with salt & pepper to taste.

In the video below, Wen Shu demonstrates a simple example of add-ins that will make your congee even more nutritious and satisfying. Congee is a great base for a variety of flavours.
