Rice Congee (for health purposes ) is a simple rice soup/porridge often eaten for breakfast in China. Congee is good for alleviating nausea, especially during cancer treatment. It can also provide relief from symptoms of cold or flu, including fever, lost appetite, and stomach issues. Congee is nutritious and easy to digest, and can help boost your immune system.
Wen Shu’s Healing Congee Recipe
Choose a nice big pot so the rice has room to boil without overflowing.
Add 1/2 cup rice, then fill your pot with water until half full.
Peel and dice a fist sized piece of ginger, then add to the pot.
Bring to a boil, then reduce to a simmer.
The congee is ready once the rice is fully cooked and the soup has thickened.
Season with salt & pepper to taste.
