Ingredients:

  • 3/4 cup bean/grain/seed mixture soaked overnight and drained
  • Three handfuls of quick oats (use gluten-free oats, if needed)
  • Handful shredded coconut
  • Handful goji berries
  • Handful sliced almonds
  • Handful cranberries
  • Heaping tablespoon cacao nibs
  • Sprinkling of sesame seeds (black preferably but white okay too)
  • 4 – 6 bananas
  • 1 sweet potato finely chopped
  • Handful of chopped cherries
  • 1-2 mangos finely chopped

* Chopped pieces should be no bigger than the tip of your baby finger.
** Add/substitute whatever ingredients you have available such as raisins, hemp hearts, nuts.
*** Add whatever quantity you like, so if you really like shredded coconut add more (or if you don’t like coconut, just omit!).

Directions:

  1. Add all ingredients in the bowl except for cherries and mangoes.
  2. Combine all ingredients with your hands until banana is smooth and all ingredients have been mixed together.  If mixture feels too soft or too wet, add more oats.
  3. Add cherries and mangoes. Combine.
  4. Make into balls the size of golf balls.
  5. Put on a baking sheet covered with parchment paper/wax paper and a little bit of coconut oil to avoid sticking.
  6. Bake in oven at 350 degrees Fahrenheit for 17-20 minutes.  Whenever you start to smell it, it’s almost ready!
