Ingredients:
- 3/4 cup bean/grain/seed mixture soaked overnight and drained
- Three handfuls of quick oats (use gluten-free oats, if needed)
- Handful shredded coconut
- Handful goji berries
- Handful sliced almonds
- Handful cranberries
- Heaping tablespoon cacao nibs
- Sprinkling of sesame seeds (black preferably but white okay too)
- 4 – 6 bananas
- 1 sweet potato finely chopped
- Handful of chopped cherries
- 1-2 mangos finely chopped
* Chopped pieces should be no bigger than the tip of your baby finger.
** Add/substitute whatever ingredients you have available such as raisins, hemp hearts, nuts.
*** Add whatever quantity you like, so if you really like shredded coconut add more (or if you don’t like coconut, just omit!).
Directions:
- Add all ingredients in the bowl except for cherries and mangoes.
- Combine all ingredients with your hands until banana is smooth and all ingredients have been mixed together. If mixture feels too soft or too wet, add more oats.
- Add cherries and mangoes. Combine.
- Make into balls the size of golf balls.
- Put on a baking sheet covered with parchment paper/wax paper and a little bit of coconut oil to avoid sticking.
- Bake in oven at 350 degrees Fahrenheit for 17-20 minutes. Whenever you start to smell it, it’s almost ready!
