It’s a simple recipe I come back to again and again. It’s best enjoyed in the summer, but honestly, it’s delicious all year round.
Why Ginger, and Why Now?
In Traditional Chinese Medicine, ginger helps release the heaviness that builds up in the body from excessive heat and humidity — exactly what a lot of us are feeling right now.
The key is using the whole root, skin included. The skin carries yang energy, and when you keep it on, you get the complete energy of the ginger, not just part of it. It’s a small detail, but it makes a real difference.
Ginger & Green Onion Oil
Step by Step
1. Prep the ginger and green onion
Mince a big chunk of fresh ginger (skin on — that’s where the yang energy is) and chop up a bunch of green onion.
2. Combine with oil
Add ginger to avocado oil in a pot and warm on the stove. Avocado oil is the best choice here — it holds up well at high heat.
3. Simmer until browned
Add the ginger to the warm oil and let it simmer gently until golden brown. This is the step where timing matters most, so watch it happen below:
4. Turn off the heat and add the green onion
As soon as the ginger is browned, turn off the heat and stir in the green onion. You’ll see it sizzle and brighten right away:
5. Cool and season
Let the oil cool completely, then stir in a pinch of salt to bring out its natural sweetness.
6. Store
Transfer to a jar and keep it in the fridge for up to two weeks.
How to Use It
Drizzle it over pretty much anything:
